Ingredients:
2 chicken breasts, cubed & pounded
2 red bell peppers, cut into thin strips
1 medium onion, cut into thin strips
2 Tablespoons butter
1 Tablespoon olive oil
3 Tablespoons garlic, chopped fine
1/4 cup white wine
2 teaspoons Italian seasoning
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 vegetable bouillon cube dissolved in 1 cup hot water
Directions:
Add butter, oil, and chopped garlic to large pan. Cook approximately 3 minutes. Add the bouillon & water mixture, wine and seasonings. Once bright to a boil, add the onion & bell pepper strips. Simmer, covered, approximately 15 minutes.
Meanwhile cut, cube and then pound the chicken breast cubes, ever so lightly dredge the chicken in cornstarch. Shake to remove excess.
Add the chicken directly to the simmering pan and push into the liquid and veggies. Cover cook 5 minutes on one side, turn over and simmer another 3-5 minutes.

Serve over rice or pasta.
