"Honey" Walnut Shrimp or Chicken
Walnuts:
1/2 cup walnuts
1/4 cup water
2 tablespoons brown lakanto
1 teaspoon butter
Boil for 8-10 minutes. Stirring constantly to evenly coat. Place on cookie sheet to cool & dry
Sauce:
1/2 C Just Mayo brand mayo
2 ounces softened cream cheese
2.5 tablespoons powdered swerve sweetener
2 teaspoons Sukrin clear fiber syrup
1/2 tablespoon dijon mustard
1-2 tablespoons half & half or almond milk to lightly thin out the sauce
Coating
1 scoop unflavored Whey protein isolate
Salt to taste
White pepper to taste
*note, this will coat both the 1 serving of shrimp and 1 serving of chicken along with a tad extra
10 large shrimp, peeled & deveined
OR
1 boneless skinless chicken thigh, cubed
Oil for frying
Liightly coat the shrimp and/or chicken with the isopure mixture. Then lightly fry in oil of your choice. Drain on paper towels, then mix together with a couple tablespoons of the sauce and a few "candied" walnuts. Serve immediately.
I enjoy the shrimp version with broccoli and the chicken version with green beans, the choice is yours.
You can also mix the sauce with the veggies in the pan after you finish cooking your protein (drain any leftover oil) adding it to the pan will warm it up and cause it to be a little more runny. Which is perfectly ok.
You won't need all the sauce you made unless you are feeding a family. Then triple the amount of shrimp or chicken listed above
